Basically anything levels you in this game (including gathering and crafting). But like everyone else mentioned, play the game till lvl 80 (it takes about 2 - 3 week or so). It makes you understand your class and its the nicest part of game. There is no gear treadmill at lvl 80 so you would basically still do the same things as when you level.

Below level 80 crafting is pretty much useless and even a lot of level 80 stuff is useless, but that's because gear is so readily available in this game. You can even buy sets of level 80 exotic gear for karma, for example, or from the TP for very little gold. But yeah, crafting is really a level 80 affair.
I think you will enjoy it a lot. It is harder, though, a lot more challenging content at level cap and in the exps. The experience of 1-80 is the game, level cap is just more of that, but mobs use a lot more CC and hit harder. However, there is a simple solution to your perceived dilemma. Do what I did, and level alts.
